🇫🇷 French Lamb & Potato Stew with Tarragon + Thyme
Rustic, herb‑forward, and quietly elegant.
Ingredients
- 1–2 lbs lamb shoulder or stew meat
- Salt + black pepper
- 2 tbsp olive oil
- 1 onion, diced
- 3–4 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 3–4 cups diced white potatoes (Yukon Gold ideal)
- ½ cup white wine (optional but very French)
- 4 cups broth (chicken or lamb)
- 1–2 bay leaves
- Fresh thyme — 4–6 sprigs
- Fresh tarragon — 2–3 tbsp chopped (plus extra for finishing)
- Optional: 1 tsp Dijon stirred in at the end for a classic French finish

Instructions
- Brown the lamb
Salt/pepper generously. Sear until deep golden. This is your flavor foundation.
- Build the aromatics
Add onion, carrot, celery. Cook 5–7 minutes. Add garlic for the last 30 seconds.
- Deglaze (optional but recommended)
Add white wine and scrape up the browned bits. Reduce by half.
- Add potatoes + broth + herbs
Add potatoes, broth, bay leaves, and thyme sprigs.
Save the tarragon for later — it loses its magic if simmered too long.
- Simmer
35–45 minutes until lamb is tender and potatoes are soft but intact.
- Finish the French way
Remove thyme stems. Stir in:
- Fresh chopped tarragon
- Optional 1 tsp Dijon
- A splash of lemon juice or white wine vinegar for brightness
- Taste + adjust
Salt, pepper, more tarragon if you want a stronger anise lift.
