Reference: Baked Potato, Bacon in the Oven

How wonderful is it that russet potatoes can be cooked at different temperatures?

Scrub em, fork em, roll em in salt, drop em directly on the rack.

Rub with Olive Oil for a soft skin.
Wrap them in Foil to steam em, (soft skin)


Conventional or Regular Oven:
(about 5 ounces or 150 grams each)
45 minutes at 400 degrees F.
60 minutes at 350 degrees F.
90 minutes at 325 degrees F.

Line Baking sheet with foil or parchment
Don't Pre-heat if you can  
400 degrees 17-20 minutes / 15-18 pre-heated

Baked Eggplant

This is a basic baked eggplant recipe, which I used for the foundation of eggplant parm.

1 Eggplant, sliced in 1/2" thick slices
8 oz shredded Mozerella Cheese
1 C pasta sauce.

Grease a baking dish with 1 TBS+ Olive Oil

Pan 1: 1/2 C flour seasoned with 1.5 Tsp Black Pepper & Salt

Pan 2: Egg wash 1 Egg with 1/4 C Water or Milk

Pan 3: combine
1/3 C Breadcrumbs
1/3 C Parmesian cheese
1.5 -2 TBS Italian Seasoning
1 Tsp Garlic Powder

Dredge eggplant slices through flour, then egg wash, then breadcrumb mixture, place in oiled baking dish.
Bake at 350 for 15 minutes
Top slices with cheese, bake until melted.
Remove, top with pasta sauce, return to oven if you want it heated through.  Or serve as is.

Pork Tenderloin (small)

375 for about 35 min. to 160 degrees - Will continue to cook when removed
In a foil lined baking dish

1/4 cup orange juice
2 tbs soy sauce
1" grated ginger
1 garlic clove per loin
1 tsp sesame oil
1 tsp coarse salt
1 tsp black pepper
1 TBS orange marmalade

How I think this should work:
mix all ingredients except marmalade
marinate for 1/2 hour or more
>> if unable to marinate, pierce meat with fork
place in foil lined baking dish, coat up side with marmalade

bake at 375 for 35 - 45 minutes until thermometer reads 160.
remove from oven let stand for 10 minutes before carving

Grill - wrap in foil cook to 150, then remove foil and sear.

Baked Pasta Experiment

Feeding four growing boys is a task unto itself. Ask any Army kitchen. So far they don't like Shepherd's Pie or Lasagna. Pulled Pork was a success. But what to keep in the fridge that they can reheat themselves. My mom made the best Tuna Casserole and I loved it cold or reheated. We actually had a built in Amanna Radar Range in the oven, but they bought a more modern microwave. So tonight is the first experiment in baked Pasta. Large shells (not jumbo for stuffing or tiny shells).

1 LB shells (possible substitutes: Ziti, Moscatelli, Penne)
1 LB Mozarella
1 Lb Ricotta
1 Jar Marinara Sauce
1 egg
1/4 cup grated Parm/Romano/ Locatelli
1 TSP Mrs. Dash Italian blend or Italian Seasoning & garlic
1 Clove Garlic

Preheat oven to 350

Cook Pasta as instructed to al dente
Grate 1/2 Mozarella
Slice 1/2 Moz.
In a Large mixing bowl: Mix Ricotta, Egg, grated Moz. Spices, Parm.
bowl needs to be big enough to fit pasta and mixture
Slice or press garlic and mix into Cheese/Egg mixture.
When Pasta is cooked, drain and add 1/3 pasta to Cheese Mixture, stir, add next third repeat.
Coat bottom of 9 x 12 baking pan with a little sauce
cover bottom of pan with about 1/2 pasta / cheese mixture.
spoon in abt. 1/2 sauce and spread evenly with spoon
add 2-6 slices of Moz. reserving enough to cover the top
spoon in the rest of the pasta, cover with sauce
arrange the remaining moz. slices on top.

Bake for 35-40 min

Paprika Rub:
1.5 TBS Paprika
0.5 TSP seasoned salt
1.5 TSB Lemon Juice
1 TSB white Vermouth
1 TSB Olve Oil

combine rub ingredients, rub chicken
