Black Bean and Ham Soup AI amended

 


Black Bean & Ham Soup — Minimalist Recipe Card

Ingredients

  • 1 tbsp olive oil

  • 1 medium onion, diced

  • 1 cloves garlic, minced

  • 1 cup chopped ham

  • 2 cans black beans (15 oz each)

  • 3 cups chicken broth

  • 1/2 C uncooked Rice

  • 1 can tomatoes with chiles (10–15 oz). (try sub 1/4 C salsa)

  • 1/2 tsp cumin 

  • 1/2 tsp chili powder

  •  1/2 tsp Badia Sazon (ex salt and pepper)

  • 1 tbsp red wine vinegar or lime juice

Instructions

  1. Sauté onion in olive oil until soft; add garlic.

  2. Add ham and cook briefly.

  3. Add tomatoes, spices, and one can of beans.

  4. Blend the second can of beans with broth; add to pot.

  5. Simmer 20–30 minutes.

  6. Finish with vinegar or lime; adjust seasoning.


Rice Options

Cook rice in the soup:
Add ½–1 cup uncooked rice + 1–1½ cups extra broth; simmer until tender.

Serve rice on the side:
Keeps the soup brothy; spoon soup over rice or serve separately.

Add cooked rice at the end:
Stir in 1 cup cooked rice just before serving.
